Wine for Tasting:

Lavina, Elicere, Cabernet Sauvignon, McLaren Vale 2010

Elicere means to ‘entice’ and this wine certainly does that.  I always get my red buzzer ready when pouring McL Cabernets because the moment the wine gets too porty or hot and oaky I hit it hard, sound the alarm, and move on rapidly.  There was no need for my buzzer on this occasion!  This wine draws you back to glass over and over again.  Everything about it is restrained, calm and elegant.  With more red fruit than black and with a lovely slick, not cloying, texture this is a very well made wine indeed.  There is minerality here, too, which keeps everything from getting too jammy.  All in all, Lavina, Elicere, Cabernet Sauvignon is a triumph.  It is drinking already, but that is clearly because it is beautifully balanced.  Think nothing of ageing it for 5-8 years – Elicere has the breeding to develop considerably in the bottle.
